I doubt you will be disappointed with SkyDemon. It is an excellent EFB application and will run on almost anything.
I don't have any experience with using Easy VFR..

I would contact LAA Engineering about the Accepted Types List. I also couldn't find it.
I found reference to it, so maybe there is a link missing or the link has become broken during the website revamp.

I think this question has been asked in the past and, from memory, I think the answer is "no" unfortunately. There may be some homebuilder/individuals who have had limited success in making their own, but it is a complex procedure needing controlled heat and possibly, pressure applied. I think there...

Mine took about 10 working days, and only one very simple query involved.
Now into summer hols time, so likely a bit longer (maybe).
I think the days of 36 hr permit renewal turnaround times are a thing of the past..
