Having just put the last coat of varnish on my new (over engineerd) workbench I am sort of quaified to answer this :roll:

Balls

Yup that right about the height of your nads, possibly, plus an inch or two. height and arm length are factors that will dictate(no that wasn't a pun) the size. I am fortunate that I have worked at various workbenches in the electronics trade so have an idea what works for me.

I still did make my bench so that the legs can be removed, dropping it about 18" I have screw adjusters from Axminster tools at the bottom of the legs as levelers(also will fit on lowered bench). You may want to drop the bench height when working on a fusalage. My bench height is 35 1/2 inches, and I am 6 foot.

If you get it wrong you could always build blocks under the legs, or shorten them.
