Hi Malcolm. You need to agree an appropriate inspection/repair/overhaul process with your LAA Inspector and produce worksheets describing all work you carry out. Because the aircraft has not had a Permit renewed within 12 months your Inspector will not be able to sign off a Permit Flight Release Certificate, that will have to be done by LAA Engineering HQ and the worksheets sent for their approval. Once Engineering is satisfied that all is well they will send a PFRC and you can carry out the flight test and apply for a new Permit.
There are a number of Technical Leaflets that provide useful information on inspection, repair etc. Hover the cursor over Aircraft & Technical and click on Data Library on the drop down menu. All the Technical Leaflets are available from a link at the top of the next page that opens.
